Yeast is used in baking industry for making bread , cake and pastries because yeast helps it to make spongy and softy.

in any process if yeast is used the process is known as fermentation.

Fermentation takes takes place with yeast and make bread , cakes and pastries spongy.

Bread – Carbon dioxide causes dough to rise (leavening), the ethanol evaporates during baking.

So during baking it gets spongy .

Kindly note : Fermentation is any other process but it is a part of yeast called as "Fermentation in yeast".
