Why is there no interaction between particles in an ideal gas?

Ideal Gas is a Hypothetical concept and there is nothing such in existence, except that Gases in real life tend to posses Ideal Gas Behaviour at certain conditions of temperature and pressure.
According to Kinetic theory of Gases an ideal gas is assumed to have no interaction in between its constituents. That is how an ideal gas is defined. (It is not something concluded from experiments and then assigned).
