why is vanilla ice cream white when vanilla extract is brown?

Ice Cream, before it is turned into real ice cream, we call these mixture of ingredients white mass or mix, in most countries there are laws, and Govt in some countries monitor what goes in this ice cream mix, the law dictates minimum milk fat or butter fat ( level, and milk solids ( these are the other solids which are not fat) also called MSNF, or just SNF, these terms are well known in the dairy industry.This is pure white due all the ingredients are white, to the best of my knowledge in every country this is White Mix,All the other additions are done, just before the final package, to keep their identity of fruit/nuts/As flavor is extremely low quantity it does not make visible difference in the color of White mix.

Because when vanilla in concentrated it's enzymes which makes it look white are evaporated and the result is brown enzymes residue if you look properly you will notice that extract is less sweet and vanilla is smoothet
