Vinegar is ethanoic acid or acetic acid, it is acidic in nature and lowers the pH of the material in which it is added. At low pH and in acidic conditions, bacteria are destroyed and are not allowed to grow, so adding vinegar prevents bacteriological growth and contamination. Hence it is added in packaged foods like pickles.
