because yeast produces co2 which make the cake fluffy. hope it helps you

Its very useful process .it is when we add yeast,it reproduces so rapidly so when they reproduce,they let out more number of co2 gas.when co2 is released it creates air bubbles in between the cake dough and make it porous enough for a fluffy and softcake.....
