yeast converts grape juice in absence of oxygen to form alcohol, mainly ethanol and carbon dioxide

Yeasts are single-celled organisms. Yeast respires anaerobically to produce ethanol and carbon  dioxide. (This is called fermentation). Due to this property it is used in the production of wine and  alcoholic drinks.
