because blunted knife will exerted less pressure which can not cut an onion

The action of using a knife which is normally made of a material much harder than the object you are trying to cut is made much harder than normal if the blade on the knife is dull ,because you are not breaking through the surface of the object ,you are trying to tear it ,by keeping the edge of the blade sharp it is much easier to penetrate the object

Some knives are designed to slice and some are designed to chop

Butchers normally slice through meat whereas chefs would usually chop through vegetables, different actions different knives
