Curd formation is a process of fermentation done by the bacteria existing there, they need an optimum temperature for there proper growth which is 30-37 degre, so the temperature during winter inhibits there proper growth that's how it becomes difficult to set curd during winter

IT IS DIFFICULT TO SET CURD IN WINTERS BECAUSE THE WEATHER IS COOL AND IN SUMMER THE WEATHER IS HOT SO IT IS EASY TO SET CURD IN SUMMER SEASON.
