because this reaction is so exothermic a lot of heat gets out of this
if wrongly added then the man who is adding may get some major injuries

water added to acid is not recommended as there is a sudden rapid rise in temp. and acid being in the bulk tends to spurt out. on the contrary when acid is added to water the heat gets absorbed in the water medium and the acid being heavier settles down.
