Jams and jellies are not attacked by bacteria or fungi because they are stored in a air tight container which prevents microorganisms to grow inside it.

Jams and Jellies contain a lot amount of sugar in it and due to presence of high level sugar , it lowers the water content in it .When bacteria enters into jelly they die due to absence of water content..Therefore,We are not attacked by the diseases caused by bacteria's.
