why jams and pickels do not spoil
easily

✓ Moisture is required for growth of microorganisms and their reproduction. In absence of moisture these organisms cannot replicate. 

✓ Salts and edible oils are added as preservatives in pickles and in jams as well to check the growth of micro organisms and prevent them from attack of microbes.
