jams and Jellies have been used over decades as quick spreads and ready to eat food for kids. They both contain high proportions of sugar that acts as natural preservative for fruits and vegetables (boiled/diced). However Jams and Jellies are preserved using natural preservative (Sugar) and synthetic ones as well (eg - Sodium Benzoate - Class II Preservative). Sodium Benzoate - Sodium salt of benzoic acid (Chemical Formula - NaC₇H₅O₂). Also nick named E211.

All synthetic preservatives are bacteriostatic and fungistatic under acidic conditions, hence food items preserved as jams and jellies are less prone to getting spoiled. Shelf life of Jam/Jellies may vary from 3 months to 12 months depending upon quality of raw material and storage conditions.
