why lakes and rivers do not suddenly freeze in winter

The winter directly arrives with freezing temperature it decreases on and on and when it reaches the freezing temperature lakes and rivers freezes.Like first the temperature would start with10 and go on and reach 8 and then 5 then on and on then it reaches the freezing temperature.
