The copper vessels are tarnished due to the formation of copper oxide due to oxidation of the metal.
Copper oxide is basic in nature.
The lemon or tamarind juice contains citric or tartaric acid which reacts with the basic oxide and the neutralization reaction takes place. Due to neutralization, the vessels are cleaned

here is your answer mate...
lemon and tamarind are mild acidic in nature and copper pots generally gets oxidised and forms a layer of Cu0.
by washing the vessel by lemon or tamarind juice neutralises the layer and that layer get removed.. hence the vessel again becomes shiny....
