Answer :  Essentially the liver produces bile so that when fats are consumed they are able to be absorbed instead of simply excreted. Which sounds like a good thing when you think of it in terms of trans/unsaturated fats (bad fats) but the human body needs fat for fatty acids and absorption of fat soluble vitamins (vitamins A, D, E, and K). Along with digestive health, it has also is how bilirubin derived from the hemoglobin (oxygen carrying component of the red blood cell) is recycled by the body. That is what gives bile its infamous yellow color.
