The simple reason is that metal is a very good conductor of heat and would soak up the heat from a frying pan, boiling water, hot oil etc like a sponge.
Wood and plastic on the other hand are poor conductors of heat and do not soak up heat like metal does, in fact all the heat is confined to the point where the heat is being transferred to the implement
