Milk get sour because of harmless bacteria called lactobacillus, which uses lactose for energy and creates lactic acid as a by-product. It is the lactic acid which makes milk sour. In summer the process if fast because bacteria have the favorable temperature so the can multiply. Chilling the milk slower down the this process.
