mineral acids like HCl and H2So4 contains non metals attached to hydrogens while in carboxylic acids we have carbon attached to hydrogen like CH3COOH and (COOH)2
so as we know carbon has more affinity(attraction) towards hydrogen than non metals so that is why they don't easily lose hydrogen and donot dissociate into ions so carboxylic acids are weak in nature
