The UN General Assembly is an undemocratic body in the same way as a parliament where the electorates are either gerrymandered or consists of rotten boroughs.

The fundamental issue is that each nation has a vote but each nation is not equal - for example the Middle East (depending on how you with to define it) has roughly the same population as the USA but the Middle East contains 22 nations and therefore has 22 votes in the General Assembly to the USA’s 1.

For another perspective on this, there are more than 50 nations in Africa so if Africa decides to vote as a bloc on an issue it would require most of the rest of the world to agree to vote against.

The UN is in theory a wonderful thing, but I don’t think we should take the pronouncements of the UN GA too seriously. The best way to view the UN is a neutral territory where every nation can have their say - sort of like a “free speech zone” - but democratic it is not.
