The organisms are basically divided into two types- unicellular and multicellular. Unicellular organisms like Amoeba, and Paramecium perform simple tasks and do not have complex systems to absorb food or grow or perform various biological functions whereas multicellular organisms have millions of cells because these cells form tissue and then organs and then organ systems.

Coming to your question, It would not be possible for Organisms like Elephants and Humans to perform complex biological activities with just one cell because different groups of cells perform different dedicated tasks. For Ex- Nerve cells or Neurons form the Nervous system, Cardiac tissue or cells form the Heart, and Nephrons or Kidney cells form the Urinary System.

Mammals have evolved in the process of evolution, so a single cell can't be enough to hold such large bodies.
