If the voltaic cell is allowed to mix then there will be mixture forming a solution in which there will be a mixture of molecule which will be causing the transfer of the electrons from one molecule to the other and thus there will be no energy or work that could be extracted from the given voltaic cell. Thus, no use of it.
While keeping it separate will allow its electrons to go through the wire or the electrodes allowing charge to flow and work is done.
