why nitric acid is not used in chemical reactions?

it is extremely volatile, i.e., it evaporates very easily

because nitric acid (HNO3) is a strong oxidizing agent and the hydrogen gas produced during the reaction with metal get oxidized to H2O hence no H2 gas evolved.......
