proteins might be described as the means by which organisms maintain a state that is out of thermodynamic equilibrium with their surroundings (of course, proteins are not the only means by which this is achieved). Given that life has been defined in terms of its ability to accomplish just that, the importance of these macromolecules becomes clear.
