When pickle is stored, it shouldn't come in contact with air. Atmospheric air contains moisture. This moisture aids in the growth of mold. After the pickle is transfered to a bottle, oil is poured to block the air from coming in contact with the pickle, and then the bottle is tightly closed with its lid.
