why oil is sprinkled out when water is droped in hot oil

The water heats up and expands as it is falling through the oil, due to density. the water is covered up and expands into steam blowing the oil away. ... Due to abrupt transference of heat energy from hot oil to cold water drop.

oil is lighter than water and is insoluble in water so when water is applied over it oil tries to float over it and thus gets sprinkled..
