It's because when you speak you hear your own voice in two different ways. Greg Foot explains all. The first is through vibrating sound waves hitting you ear drum, the way other people hear your voice. The second way is through vibrations inside your skull set off by your vocal chords.

Our voice sounds different when recorded because waves which is received by our recorder seems different to it.
Our voice is spread in air then it records which is a mixture of many waves.
When we record our voice our recorder record it in form of different type of wave.
