the mass of the whole body creates gravity well that is theoretically centred on the mass center of the body itself. an irregulary shaped protoplanet, say with a lobe if heavy material sticking out in one direction, might its gravitational center pulls away from the physical center of the shape. over millions and billions of years, though the strongl pull down in all directions evens out these bumps. the continents earth might seem solid, but they are malleable under so much strain, can flow like putty. In essence gravity slowly deforms a plant to turn the gravitational center into the physical center. so this is the reason of spherical shape of the plant.
