➡Potato chips manufacturers use usually flush the bags of chips with Nitrogen gas because Nitrogen gas replaces oxygen with nitrogen and hence prevents the growth of microbes which damage the food...Nitrogen also keeps the food or chips here in this case fresh and can be stored for long days!

➡Nitrogen also prevents the smell which comes if the food or chips is stored for more than one week in the presence of oxygen...

Potato chips contains some amount of oils and fats . So when they are kept in air for a long time the oils and fats present in them gets oxidised which produces an unpleasant smell and a bitter taste. So in order to prevent the potato chips from getting rancid the chips packet are flushed with an unreactive has nitrogen.
