Because having large numbers of people making their own independent decisions about what’s best for them, adds up to a better solution than having only a few or one making the decisions.
This is the basis of capitalism as well, and that seems to be working rather well. Even China and Russia have switched over.
There is also the concept of The Wisdom of Crowds that theorizes that large number of people making their own independent conclusions, added up comes to the right answer. A quick example is that if you fill a jar jelly beans, and you get a large number of people to ‘guess’ the number in the jar, it will average out to the right answer. But there’s a lot more to it.
But ‘Democracy’ is an ideal, mostly we all have representative democracies which are all imperfect implementations of the ideal, with various inefficiencies depending on the implementations. There is clearly room for improvement still.
