Because Food turns rancid when the fats and oils within them get oxidized and the taste and smell of the food changes. Adding antioxidants (substances which prevent oxidation) to food. Storing food in airtight containers to slow the process of rancidification. Refrigerating food also helps to slow down rancidification.

Rancidity: It is defined as chemical decomposition of oils and fats which in another words is spoiling food materials that difficult for consumption. It can be prevented by following methods: ... (iii) Addition of antioxidants also prevents rancidity process.
