Pure sugar has no effect on the pH of the water in which it is dissolved

But unfortunately what you buy as sugar is not chemically pure sugar. In order to increase its whiteness it is probably been bleached using bone char ( essentially calcium containing compounds) Residues of these compounds appear in the final sugar and can give rise to pH being above 7.00 in solution
