Nitrogen is an inert gas, mans it doesn't react with oil and fats. On the other hand, oxygen reacts with food substances and makes them rancid. Thus, bags used in packing food items are flushed with nitrogen to remove oxygen insidethe packet

hey first thing nitrigen is less reactive and itvis not an inert gas.....and now oxygen is more reactive than nitrogen ........example rusting is always due to oxygen not nitrogen
