Why raw vegetables and fruits kept in refrigerators where as jams and picles can be kept outside

We know that Micro - Organisms Spoil Foodstuffs. To protect food from spoiling, the growth of microorganisms in it must be prevented.

The processing of food to prevent their spoilage and retain their nutritive value for long period is called Food preservation.

This can be done in a number of ways . Microorganisms grow best at a temperature of about 21°c . That is why food kept in a refrigerator does not spoil, the temperature in the refrigerator is around 5°c . such preservation of food is called Refrigeration.

pickles are made in every home to preserve seasonal fruits like mangoes and to make them available throughout the year. Common is added to fruits like raw mangoes , lemon, chillies while pickling them.
Common salt prevents the growth of microorganisms. Sugar like salt also has preservative properties and this is used in every home to preserve fruits by making Morabas, Jams, and Jellies.

like salt and sugar other chemicals like Sodium benzoate also prevent the growth of microorganisms. These chemicals are called Preservatives. These help to preserve the food for a long time. 

Boiling is an effective way of purifying water and prevent milk from curdling . Some other methods are canning, sun drying, etc.

There are many advantages of preserving food. Preserving of food, 

1. reduces food wastage by avoiding spoiling .

2. increases the storage period of foodstuff.

3. Retains nutritive value for a long period .

4. Ensures food availability during off season.
