Red soil is predominantly made up of clay and its red color comes from the presence of iron oxide in the soil. Red soil is naturally full of nutrients and capacity to absorbing nutrients like potassium, ammonium, calcium and magnesium, which makes it very good for growing plants and vegetables. Soil which are mostly made up of clay has higher capacity of holding water and don't allow it to drain. That id why red soil is good for plants and vegetables.
