The reason why is because all rodents have nuts and other hard edibles in their diet. These things actually make up a majority of their diets as you already know. Since they continuously use them on these hard surfaces their teeth would wear down to nubs until the animal would no longer be able to crack the nuts the are the main staple of their diet. Once they can't open the nuts, they can't eat meaning they eventually die a slow hungry death. This is why rodent's teeth continuously grow throughout their short lifespans.
