If the roofs of concert halls were flat then the sound or music could not be heard uniformly among all the audience. Especially people sitting at the back of the concert hall would not be able to hear properly as sound will not get reflected evenly across the hall.

So, the ceilings of not only concert halls but even conference halls, cinema halls are made curved so that sound after getting reflected spreads evenly across the hall and all the audience including people at the back can hear sound clearly.
