why salt is applied to raw mango pieces while making pickles

Salt actually acts a preservative which prevents rancidity of edible food due to their oxidation. In order to prevent raw mangoes from getting spoil and to prevent them from getting attacked by microbes, salt is added.

as pickles contain oil content they get spoiled and give bad smell , it will not be fit for consumption
