The density of water is 1.0 grams per cubic centimeter.
The density of ice is 0.934 grams per cubic centimeter.
Ice is less dense than water, which means that water expands when it is frozen. A glass bottle is neither strong enough to restrict that expansion nor flexible enough to accommodate it, and therefore breaks.

Water expands on freezing. If the glass bottle is fully filled, then the ice expands to its fullest volume. Since there is not enough space in the glass bottle, the bottle cracks
