This is because oil harden the soil in pipes and doesn't allow the water to flow . This exactly happens with fats, the clogged the soil in drains and restrict the water to flow .

If the water won't be released then it will be collected at a place which will cause disease causing bacteria to born in it which will ' hazardous ' for human's health .
