why should the leaf be kept in boiling water and alcohol for the test for starch?

1.The hot water kills the leaf and the alcohol which was already present in that will breaks down the chlorohyll.
2.When you put IODINE on the leaves,One of them will turn to BLUE-BLACK color indicating the presence of starch
3.And the other one will turn to REDDISH-BROWN showing the absence f starch.
