The leaf of plants contains lot of stomas on the surface of leaf which important for turgitity of leaf The leaf becomes dies if it keeps out of water, so it is important for leaf for soaking in water before starting our experiment for turgitity because somata absorbs all water and became turgid

The surface of the leaf contains a lot of stoma on its surface. If the leaf is taken out of the water it'll lose water and will be flaccid in its shape because it will lose water and hence it will turn flaccid.
So for the experiment it is recommended that we should put the leaf in water for some time so that it regains its state from flaccid to turgid so that when we will be viewing it under the microscope it'll be turgid and easy to observe.
