why should water not be used to put out an electric fire

The main reason is the risk of electrocution. Water is conductive in nature and hence the electricity in the equipment could reach the extinguisher (the person dousing thefire using water) and can electrocute him/her. To put an electrical fire out, you want to unplug or de-energise the equipment on fire.

Hi,
Water is a good conductor of heat and electricity so it can produce fire and it can make the condition worse.
