This may be an obvious answer, however seeds typically need water to germinate - “to imbibe water and break open the seed coat”. Soil retains water and different soils retain water differently. A seed which grows deep taproots, I.e. queen Anne's lace or carrots, maybe requires a rich, soft and reasonably wet soil while a seed that grows shallow roots may grow well in rocky soils with little water and excellent drainage. A seed will germinate and grow a root system in just water as long as the water contains ample and accessible nutrients, a plant confined to a hydroponic container will still grow perhaps as well as a plant in soil. The ecology of soil, top soil for instance, involves many microorganisms and varying phylum of organisms. Fungi and bacteria (soil microbiology) will break down and decompose the nutrients in plant matter from fallen trees or tree leaves, and this process is needed for a seed to properly grow into a strong tree with an equally sustaining and strong root system. The growth of a seeds root system begins first in a loosely compacted, airated soil, and then a stronger, larger root system will grow through more-so compacted soils further down below.
