Why should you never use a beaker for recrystallization?

THE LARGE OPENING IN A BEAKER ALLOWS SOLVENT TO EVAPORATE TOO EASILY WHEN TRYING TO DISSOLVE A SOLUTE.
It's not ideal because it allows too much solvent to boil off when you're heating, so it's hard to keep track of the volume you have in there. Erlenmeyer flasks are a better bet, and you can loosely sit a watch glass on the top which will allow some of the vapor to condense and fall back in.
