Sodium is kept immersed in kerosene oil becausr sodium(Na) is a very high reactive element. If it is kept in contact with air, it reacts with O2 to form Sodium oxide. If it is kept in water, it reacts it with to form sodium hydroxide.

Thats why it is kept in Kerosene oil so that it doesnt react with any substance/thing.
