The yellow light is used because it is a cheap source of nearly monochromatic light. The yellow light is produced by the sodium D-line transition, which is a very strong doublet in the sodium vapour emission spectrum. In low pressure sodium lamps, the sodium D-line emission dominates.
Mind you, street lamps are commonly sodium lamps, but operating at higher pressure where the D-line transitions are pressure broadened and saturated, allowing a whiter output compared to the low pressure lamps.
