why sodium metal is used to remove last traces of water from benzene but not from ethanol???

Because sodium reacts with ethanol in much the same way it reacts with water (forming H2 and EtONa).
As a matter of fact, we use ethanol or isopropanol a(t 0°C) to quench any leftover sodium when we cleaned our stills in he lab.
