Why solid, liquid and gases have different properties?​

It is mainly due to different types or strengths of inter-molecular forces that exist among their molecules in these different physical states. Take for example Water H2O. In the solid state it is completely bonded by Hydrogen bondings so it is organized and has a regular shape and less density and large volume. Now when it is in liquid state about 20% of the hydrogen bondings are destroyed and the organized structure of ice is disturbed and the density becomes bigger. Lastly when water is in gaseous state all hydrogen bondings are lost and only London forces are present which gives water gas its characteristic properties.

Liquids have some space but less than gases.

Gases have more space between their molecules in comparison of solids and liquids.

That is why each state substance has different properties.
