why sollidified butter is gel and liquid butter an emulsion?

So the main difference between an Emulsion and a Gel is the depression medium. In case of Emulsion it is liquid and in case of Gel it is solid. Butter is a dairy product containing up to 80% butterfat (in commercial products) which is solid when chilled and at room temperature.
