Why stainless steel cooking pan is fitted with copper bottom.

Also copper has a high specific heat capacity and hence heats up faster. it's a good Conductor of heat hence uniform distribution of heat.

On the other hand bottom copper fitting have to be done in order for them to conduct heat faster while cooking.

If the inside of the cooker has been fitted with stainless steel that is negligible , thus the heating completely relies on the copper .
